- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon chicken masala
- 1 teaspoon salt (adjust to taste)
- Juice of half a lemon
For the Biryani:
- 2 cups long-grain basmati rice (washed & soaked for 20 minutes)
- 3.5 cups water
- 3 tablespoons oil or ghee
- 2 onions, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit (optional for extra spice)
- 1 tablespoon ginger-garlic paste
- Spices-cardamom,bay leaves , cinnamom.
- 1 tablespoon biryani masala
- ½ teaspoon turmeric powder
- ½ teaspoon red chili powder
- ½ teaspoon salt (adjust as needed)
- ¼ cup fresh mint leaves, chopped
- ¼ cup fresh coriander leaves, chopped
Instructions
Step 1: Marinate the Chicken
- In a bowl, mix yogurt, little ginger-garlic paste, turmeric, red chili powder, chicken masala, salt, and lemon juice.
- Add the chicken and coat evenly. Let it marinate for at least 30 minutes (2 hrs for best flavor).
Step 2: Cook the Biryani
- Heat oil or ghee in a deep pot and add one small amount red chilli powder for natural color.
- Add raw spices and let them cook.
- Add sliced onions and cook until golden brown.
- Stir in fresh mint and coriander leaves.
- Add ginger-garlic paste and cook even .
- Stir in tomatoes and green chilies. Cook until the tomatoes soften.
- Add biryani masala, turmeric, and red chili powder. Saute until the oil starts separating.
- Add the marinated chicken and cook for 10-15 minutes, stirring occasionally, until the chicken is mostly cooked.
Step 3: Add Rice & Water
- Add the soaked basmati rice and mix gently.
- Pour in 3.5 cups of water and add salt.
- Bring to a boil, then cover and cook on low heat for 15-20 minutes until the rice is tender and water is absorbed.
Step 4: Rest & Serve
- Let the biryani rest for 10 minutes before fluffing it with a fork.
- Serve hot with raita or a Dhaalcha.
